Grapefruit Cupcakes

1/2C yogurt
1/2C cold unsalted butter
1/4tsp salt
1tsp baking powder
1/2tsp baking soda
2T honey
1/4C granulated sugar
2 1/2C APF
1 grapefruit, zest and all

1. preheat oven 425degrees F.
2. whisk dry ingredients together.
3. cube butter and work into dry ingredients until mealy texture shows
4. zest and dice grapefruit.
5. mix zest and sugar together. whisk in 2 tablespoons of grapefruit sugar. eat some too ;)
6. add honey, yogurt and diced grapefruit.
7. toss everything together until well mixed.
8. scoop dough into cups, sprinkle left over grapefruit sugar on top
9. bake 15-17 minutes
makes 1 dozen
